- 1 large red onion thinly sliced
- 1 tbs. unsalted butter
- 1 tub zucchini spirals
- 1 cup cherry tomatoes halved
- 1/2 yellow bell pepper diced
- 1 cup arugula
Blazing Apple Cider Vinaigrette
- 3 tbs. olive oil
- 2 tbs. Blazing Apple Cider Vinegar
- 1 tsp. Dijon mustard
- 1/2 tsp. Basil
In a medium skillet heat butter over medium heat. Once butter is melted add in the red onion slices and season with salt and pepper. Turn down heat to medium-low and cook for about 10 minutes.
In a small bowl whisk together the ingredients for the Blazing Apple Cider Vinaigrette.
Toss the zucchini spirals with cherry tomatoes, arugula, red onions, salt and pepper. Add in the vinaigrette and toss to make an even coat.
