• 1/2 cup Greek Yogurt
  • 2 tbs. Blazing Apple Cider Vinegar
  • 1 tsp Dijon Mustard
  • 1 tsp. Honey
  • 1/2 tsp. Salt
  • 1/2 tsp. Crushed Red Pepper Flakes
  • 1/4 tsp. Black Pepper
  • 1 small can of Chickpeas, rinsed and drained
  • 2 stalks Celery chopped small
  • 1 Apple chopped into cubes
  • 1 cup Red Grapes halved
  • 1/2 Red Onion diced
  • 1/4 cup fresh Parsley minced
  • 1/2 cup chopped Walnuts
  • 1 bag fresh Spinach


In a small bowl mix together the yogurt, Blazing Apple Cider Vinegar, mustard, honey, salt, red pepper flakes and pepper. Whisk until combined and set aside.

In a large bowl combine chickpeas, celery, apple, grapes, onion, parsley and walnuts. Stir in the dressing and coat evenly. Refrigerate for about an hour before serving. Serve over the fresh spinach.

Alternative: Add some fresh grilled chicken slices.
