INGREDIENTS:

Cilantro Lime Dressing:

 

Broccoli Slaw:

  • 3 cloves garlic minced
  • 8 mushrooms sliced
  • 1 small bag of broccoli slaw

DIRECTIONS:

Cilantro Lime Dressing:

Place all ingredients in a food processor and mix thoroughly.

Broccoli Slaw:

In a skillet with olive oil on medium-high heat sauté garlic, mushrooms and broccoli slaw until slightly tender.

Red Snapper:

Preheat oven to 400 degrees. Place red snapper with skin side down on a large piece of parchment paper. Lather the filet of fish with the cilantro lime dressing. Over the red snapper with the broccoli slaw and wrap up the fish with the parchment paper. Place on middle rack of the oven and cook for 20 minutes.
