Honey Roasted Carrots

INGREDIENTS:

3 lbs carrots, peeled and sliced into 1 1/2 inch pieces

3 tbs. olive oil

2 tbs. honey

1 1/2 tbs. Blazing Apple Cider Vinegar

2 1/2 tbs. chopped parsley

1 tbs. fresh thyme leaves

Salt and Pepper to tate

DIRECTIONS:

Preheat oven to 400 degrees.

Place carrots pieces on a baking sheet and drizzle with olive oil and salt and pepper. Toss to coat evenly. Roast in preheated oven for 20 minutes.

In a small bowl mix honey and Blazing Apple Cider Vinegar. Drizzle carrots with the mixture and return to the oven for another 10-20 minutes.

Remove from oven and sprinkle with the parsley and thyme.

*Note, if carrots are small then reduce roasting time.
