INGREDIENTS:

  • 1/4 cup Blazing Apple Cider Vinegar
  • 2 tbs. olive oil
  • 1 tsp. honey
  • 1 tsp. sea salt
  • Freshly ground black pepper
  • 2 lbs. cucumbers (about 4 medium)
  • 2 tbs. finely chopped fresh chives

DIRECTIONS:

In a large bowl whisk together the Blazing Apple Cider Vinegar, olive oil, honey, salt and pepper.

Using a mandolin, slice the cucumbers into 1/8 of an inch thick. Combine the cucumbers and the chives in the bowl. Cover and refrigerate for at least two hours or for best results over night. Add more salt and pepper, if needed, before serving.
